Ingredients (Makes 4 Bowls)
- 680 g / 1.5 lbs sweet potato, peeled and diced into 1/4-inch cubes
- Salt, pepper, and cinnamon to taste
- 450 g / 1 lb 93/7 lean ground beef
- 1 tbsp tomato paste (16 g)
- 1 tbsp taco seasoning
- 2 cups low-fat cottage cheese (452 g)
- 4 small avocados (400 g)
- 4 tbsp hot honey (84 g)
- Cooking spray or a light drizzle of oil
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Spread the diced sweet potatoes on the sheet, lightly spray with cooking spray, and season with salt, pepper, and a pinch of cinnamon. Bake for 30 minutes, flipping halfway through to ensure even roasting.
- While the sweet potatoes are baking, cook the beef. Heat a pan over medium-high heat, add the ground beef, and cook for about 5 minutes, breaking it apart into small pieces. Drain excess liquid.
- Add tomato paste, taco seasoning, and a small splash of water. Stir and cook for another 1–2 minutes, then remove from heat.
- Assemble your bowls: add roasted sweet potatoes, top with taco beef, spoon in cottage cheese, add fresh avocado, and finish with a drizzle of hot honey.
Meal Prep Tip
This bowl stores well for up to 4 days in the fridge. For best freshness, keep the avocado separate and add it just before serving. The hot honey can also be drizzled at the end to maintain that sweet and spicy contrast.
